Looking for a super simple way to use our GF Mung Bean Fettuccine? Here's a quick recipe which will take you no longer than 10 minutes to whip up! ⁠

So, why Mung Bean Fettuccine? ⁠Those small green oval-shaped legumes are NUTRIENT-dense and high in plant-based protein and dietary fibre. ⁠⁠When milled and transformed into our Gluten Free Fettuccine they hold a slight nutty and creamy flavour.

INGREDIENTS

  • 1 packet of Eco Organics Mung Bean Fettuccine
  • 2 tablespoons of butter or olive oil
  • 3 large cloves of garlic, peeled and minced⁠
  • 2 cups baby spinach⁠
  • 1/4 cup chopped parsley ⁠
  • Parmesan cheese to serve ⁠
  • Salt & pepper to serve 

DESCRIPTION

  1. In a large frying pan add the butter or oil over a medium to high temperature.

  2. Add the minced garlic and cook for a few minutes or until slightly softened.

  3. Add the baby spinach and cook until it has wilted down.

  4. Add the cooked Mung Bean Pasta (drained but 1 cup of pasta water reserved).

  5. Add the pasta water and use a pair of tongs to stir the spinach and garlic through.

  6. To serve, garnish with chopped parsley, salt and pepper and parmesan cheese.

  7. Enjoy!
