This One Pan Mediterranean Fish is a quick, wholesome dish packed with fresh flavours. Ready in 20 minutes, it’s an easy way to enjoy a taste of the Mediterranean with minimal fuss.
INGREDIENTS
500g white fish fillets, cut into 6 pieces
Splash each of: Honest to Goodness Organic Extra Virgin Olive oil
Honest to Goodness Balsamic vinegar
Honest to Goodness Tamari (soy) sauce, and a knob butter
1 organic onion, finely chopped
3 cloves organic garlic, finely chopped
1 cup Honest to Goodness Basmati Rice
1 tsp Organic Vegan Umami Broth mixed in 2 cups water
In a large shallow pan (with a lid), placed on medium heat, add olive oil, balsamic, Tamari soy sauce, butter, onion and 1 clove garlic, allow to simmer for 5-10 mins.
Pour in the basmati rice and stir into the onion mixture.
Add broth and stir.
Place lid on whilst you prepare tomatoes. Halve the tomatoes, mix them with olive oil and balsamic vinegar, salt, pepper, the rest of garlic and tear in most of the basil leaves. Push down the fish into the rice. Scatter over the dressed tomatoes, put the lid back on and simmer for 15 minutes.
Scatter over the olives, fetta, and the rest of the basil and put the lid back on and leave to stand for 5 minutes, off the stove.
Drizzle lightly with a little more olive oil.
Serve with a fresh organic garden salad.
