HOW TO USE

To use potato starch to thicken liquids, first mix equal parts of potato starch and liquid (such as water or stock) in a separate bowl until smooth paste forms. Gradually add this mixture to the liquid you wish to thicken, stirring constantly to avoid clumps. Bring the mixture to a boil and continue stirring until it reaches the desired thickness.

In baking, it's important to note that potato starch has twice the thickening power of flour. To achieve the best results and prevent dry and crumbly baked goods, it's recommended to combine potato starch with other gluten-free flour. Potato starch gives dishes a glossy and silky texture, which is different from the texture provided by grain-based starches like cornstarch.

GROWING PROCESSING

Organic potatoes are crushed to extract the starch from the cell walls. Crushing the potatoes causes the cells to break down and the starch grains to be released. The crushed potato and starch mixture is then cleaned and filtered to remove any impurities or debris. Following cleaning, the starch is allowed to dry, resulting in a fine, powdery substance that resembles flour.
