Ingredients
500g Honest to Goodness Organic Mixed Dried Fruit
1/3 cup brandy
2/3 cup orange juice
¼ teaspoon nutmeg
2 teaspoons ground organic brown linseeds
1 cup organic wholewheat self raising flour
½ teaspoon cinnamon
Apricot jam, for glazing
16 pecans or other nuts for decorating, optional
¼ teaspoon ground ginger
Zest of 1 orange
method
- Soak fruit in juice and brandy along with orange zest and linseeds for at least 2 hours, or overnight
- When ready to assemble, heat oven to 150 degrees and line 2 x 6 inch (15cm) cake tins or 1 x 8 inch (20cm) cake tin with greaseproof paper
- Sift the flour with cinnamon, nutmeg and ground ginger
- Stir flour mix through soaked fruit
- Spoon into prepared cake tin(s) and smooth top
- Decorate with nuts if using
- Bake for 30-35 minutes for 6 inch cakes or 45-50 minutes for 8 inch cake
- While still warm, brush with apricot jam
