Sesame and Nut Protein Bars

- Heat oven to 170 C.
- Line a 20 cm square tin with greaseproof baking paper.
- Combine sesame seeds, coconut and chopped nuts in a large bowl.
- Heat peanut butter and honey in a saucepan over low heat, stirring well until 'melted' and add to the bowl along with vanilla paste.
- Mix ingredients together well.
- Press into the prepared tin and bake for 20 minutes.
- Remove from oven and allow to cool before cutting into squares.

1¼ cups (195 grams) organic sesame seeds
¾ cup (68 grams) organic desiccated coconut
¼ cup (30 grams) organic almonds or other nuts, chopped*
¼ cup (75 grams) organic peanut butter*
⅓ cup (95 grams) organic raw honey*
1 teaspoon vanilla bean paste
*For a vegan version use maple syrup instead of honey.
For a nut-free version, use pumpkin seeds in place of almonds and tahini in place of peanut butter.

Recipe failed
I followed the recipe to the gram. Baked exactly 20 minutes in a 170°C oven, pre-heated. Allowed to cool, for 2 hours. The result was a sticky mess that fell apart when cutting into squares. And don't try picking it up, that became sesame crumble. I would have been better off sprinkling the ingredients (unbaked) on toast and having it for breakfast.

As good as it looks!
Made this today. I used ABC nut butter instead of peanut butter only. Sprinkled a little bit of cinnamon too. Swapped the honey with pure Maple syrup. Baked as it says for 20minutes. Left it inside the oven with door slightly opened for about 1 hour. It taste so good!!!
