These Strawberry & Coconut Crumble Bars are easy to make and are filled with tasty strawberry jam. Topped with our Organic Coconut Chips to added extra crunch!
Pre-heat the oven to 180C. Line a square baking pan (brownie tin works well) with baking paper. Set aside.
Using a food processor, blend oats, coconut chips, flour, rapadura sugar, baking powder, vanilla extract, egg, cinnamon and salt. Slowly add chunks of butter to the food processor pulsing to mix it through, until a crumbly dough forms.
Press down half of the dough in the prepared baking pan, to form a smooth base. Bake for 10-12 min until lightly golden.
While the base is in the oven, mix together quartered strawberries, rapadura sugar, corn flour, vanilla extract, lemon zest, lemon juice and strawberry jam in a clean bowl.
Spoon the strawberry mixture and spread evenly onto the pre-baked dough. Then, sprinkle the remaining dough and extra coconut chips on top. Press down lightly.
Return to oven and bake for an additional 30-40 min until the top is golden brown.
Cool completely before cutting into squares. Keep in fridge in air-tight container.
