Xanthan Gum is a versatile binder and thickening agent and an excellent addition to any pantry for those who love to bake, especially those who love creating gluten free goodies. It acts as a binder to help hold ingredients together and greatly improves the texture of baked goods. It also helps prevent crumbling as it retains moisture during the baking process and delivers more elasticity.

This is thanks to its hydrocolloid properties and ability to form a sticky gel.

Xanthan Gum itself is a type of complex sugar created through a process of fermentation with the help of bacteria called Xanthomonas campestris. It's able to withstand various temperatures and pH levels and is neutral in taste.

Versatile and ideal for use in a wide variety of recipes ranging from sauces and soups, to baked goods – both gluten free and traditional cooks will be impressed!

HOW TO USE

This gluten-free food thickener is easy to use and gives a similar degree of elasticity as gluten products when used in baking goods such as muffins, cakes, cookies and similar baked goods. It can also be used as a stabiliser to help prevent products from separating (for example, oil in salad dressing).

It's important to note that Xanthan Gum is not a 1:1 substitute for its glutenous counterparts.

Here's a handy guide you can follow when using Xanthan Gum in baking:

If using a single ingredient gluten free flour or your own gluten free flour mix, the amount of Xanthan Gum required will vary. We recommend: - For yeasted bread & pizza doughs – use 1 tsp Xanthan Gum per 1 cup of flour - For baked goods like cakes and muffins - use ¼ tsp Xanthan Gum per cup of gluten free flour - For pastry (where more elasticity is required – use ½ tsp Xanthan Gum per cup of gluten free flour

However, if you are using a pre-made gluten free flour blend, check if it has Xanthan Gum incorporated into it already, as it may not be required.

For use as a thickening agent, the amount will depend on the desired consistency. The more Xanthan Gum added, the thicker the liquid will become. Simply blend into soups, sauces and creams, it will thicken instantly!

 

GROWING & PROCESSING

Sugar (derived from corn starch) is fermented, creating a thick broth-like substance. This is then dried and then made into a powder.
