What is Bibimbap? Bibimbap simply translates to - mixed rice with meat and assorted vegetables. This Korean dish is packed with vegetables and protein. It's a great dish to cook when you need to use up some leftover veggies and you can always switch out the beef for tofu if you would like a vegetarian option.
Method
- Soak rice for 4-24hrs or rinse until water runs clear.
- Marinade beef in minced garlic, ginger, spring onion, tamari and 1 tbsp sesame oil for at least 4 hrs before cooking.
- Quickly pan-fry beef for 2-5 minutes.
- Thinly slice or julienne the carrot.
- Thinly slice zucchini and saute until soft in a little sesame oil, repeat this with the asian greens and bean sprouts.
- Cook rice with absorption method or using rice cooker. Once cooked add in rice vinegar and sesame oil.
- Fry egg in pan.
- Place rice in bottom of bowl. Place the satued vegetables and beef around the bowl. Add egg and gochujang on top with a sprinkle of sesame seeds. Mix together and enjoy!
