Celebration Cassata

SHORT DESCRIPTION
Cassata is a traditional Italian ice-cream usually served on special occasions and celebrations such as Birthdays, Christmas, Easter, Weddings, Anniversaries and other celebratory seasons. It is the perfect dessert, as it can be made ahead of time and simply cut and served when needed. This Nutritionist Designed version of Cassata is created dairy free by making a homemade coconut ice-cream instead of dairy ice-cream and uses Honest to Goodness Organic Ingredients for superior nutritional goodness and taste. DESCRIPTION
Ice Cream Method:
- ½ a cup of Honest to Goodness Organic Coconut Sweetened Condensed Milk
- ½ a cup of chilled Honest to Goodness Organic Coconut Cream
- 1 teaspoon of Honest to Goodness Vanilla Powder
- 1 tablespoon of Honest to Goodness Organic Agave Syrup
Cassata Method:
- Line an 18-20cm loaf tin with baking paper.
- To make the bottom layer of the Cassata, make 1 batch of homemade coconut ice-cream. Stir through the finely chopped dark chocolate buttons and pour into the lined loaf tin. Place in the freezer to set overnight.
- For the middle layer, make 1 batch of home made coconut ice-cream. Stir through the coarsely chopped sultanas and dried apricots. Pour over the base layer of the Cassata and return it to the freezer to set overnight.
- For the top layer, make 1 batch of the home made coconut ice-cream. Stir though the Matcha Green Tea powder. Pour over the first two layers of the cassata and return to the freezer to set overnight.
- Keep stored in the freezer. When ready to serve. Remove the Cassata from the loaf tin. Decorate with grated chocolate, dried fruit and nuts or fresh fruit of your choice.
- Slice and serve.
- Any remaining Cassata can be wrapped in cling film and stored in the freezer, if it can possibly be resisted!!
INGREDIENTS
Homemade Coconut Ice Cream (This is for one layer. You will make this batch 3 times).
- ½ a cup of Honest to Goodness Organic Coconut Sweetened Condensed Milk
- ½ a cup of chilled Honest to Goodness Organic Coconut Cream
- 1 teaspoon of Honest to Goodness Vanilla Powder
- 1 tablespoon of Honest to Goodness Organic Agave Syrup
Bottom Layer (Chocolate Crunch Goodness)
- 1 batch of coconut ice-cream as per recipe above.
- 1 cup of Honest to Goodness Organic Dark Chocolate Buttons finely chopped. Middle Layer (Fruity Goodness)
- 1 batch of coconut ice-cream as per recipe above
- ¾ cup each of Honest to Goodness Organic Sultanas and Honest to Goodness Organic Dried Apricots coarsely chopped Top Layer (Matcha Goodness)
- 1 batch of coconut ice-cream as per recipe above
- 1 tsp of Honest to Goodness Organic Matcha Green Tea Powder
Middle Layer (Fruity Goodness)
- 1 batch of coconut ice-cream as per recipe above
- ¾ cup each of Honest to Goodness Organic Sultanas

Top Layer (Matcha Goodness)
