- In a large saucepan over high heat, caramelise the onion and garlic with a dash of olive oil, stirring occasionally.
- Add the mincemeat, tomato puree, chives and spices. Stir continuously until the meat is browned
- Reduce the heat to low and add the drained beans and corn
- Leave to simmer, stirring occasionally, for 10-15 mins to allow the juices and spices to absorb into the meat mixture
- Serve with fresh guacamole and cheese, Enjoy!
