Live miso contains active enzymes which aid digestion, as well as help to tenderise meat or fish and brings out nice Umami flavour. It's often used to make soup, dressings, dipping sauces or added to a hot pot.
Due to its shorter fermentation process, the soybeans are peeled beforehand to make sure the bitterness is removed. �

The colour of the miso paste may become darker over time but does not affect the quality of the product. White spots may appear on the surface but it is a sign of healthiness in an authentic miso.
