SHORT DESCRIPTION

The healthier festive treat you've been looking for! Impress your guests this silly season with this raw Christmas slice. 

INGREDIENTS

BASE:
12 pitted medjool dates (soften in boiling water)
1/3 cup cacao powder
1/3 cup Brazil nuts
2 heaped tbs ABC butter
2 heaped tbs coconut flour
1-2 tbs boiling water

2ND LAYER:
1 cup (subjective to dish size) Frozen blackberries 
1/3 (subjective to dish size) cup Pistachios, diced 
2 tbs (subjective to dish size) Buckwheat groats

3RD LAYER: 
Thick part of coconut cream (top part of can) 
4 heaped tbsp vanilla coconut yoghurt 
Handful of raw cashews
Vanilla 
1-2 tbsp maple syrup

4TH LAYER:
Dark chocolate melted

Toppings:
Freeze dried strawberries
Goji berries
Pistachios

DESCRIPTION

  1. Blitz all base ingredients in a high speed blender until combined (nutty chunks are good) 
  2. Line a rectangle deep dish with baking paper. Press the ingredients to the base of dish 
  3. Top with blackberries, pistachios and buckwheat. I like to press them down to the base 
  4. In a high speed blender, thoroughly combine 3rd layer ingredients. It should be thick, smooth and creamy 
  5. Top the 2nd layer with cheesecake. Freeze for a few hours 
  6. Once frozen, take out of the freezer and allow to soften for 10 mins. Slice with a hot knife into squares 
  7. Top with melted dark choc + toppings. Enjoy!
