- Scoop the avocado into a bowl and mash roughly.
- Add the miso and stir to combine.
- Meanwhile, begin to poach your egg for 3-4 minutes.
- Place salad leaves on a slice of freshly toasted bread. Dollop with a generous spoonful of the miso & avocado.
- Drain your poached egg and gently place on top. Sprinkle with snow pea sprouts, black sesame seeds and salt & pepper. Enjoy!
